Coconut and Semolina Ghriba
Ingredients:
300g Desiccated Coconut
200g Semolina
200g Granulated sugar
1 tablespoon powdered sugar
22g Vanilla sugar
16g Baking powder
1 teaspoon lemon zest
3 Eggs
100ml vegetable oil
For decoration:
Powdered sugar
Instructions:
1- In a bowl mix the eggs with the sugars and lemon zest. Using an egg beater beat the ingredients all together until you get a whitish mixture.
2- Add vegetable oil and continue beating for 30 seconds.
4-Add the Desiccated coconut and stir to incorporate.
3- Add the baking powder then, little by little, add the semolina and using your hand, mix all the ingredients until well incorporated.
4-Cover and let it rest for 10 minutes.
5- Preheat your oven to 180C.
6-Line a baking tray with the baking paper.
7- Wet your hands with a little bit of water ( or orange-blossom water) and start shaping the mixture into a walnut-sized balls.
8- Roll the dough ball in a powdered sugar, flatten slightly, then place it on the baking tray.
9- Bake for 15 minutes or until golden and firm.
10- Once done, remove from the oven and let them cool down for while before serving .
