Vanilla Muffins

Ingredients: 4 eggs 180 g Granulated sugar 120 ml Vegetable oil 440g All purpose flour 16 g Baking powder 1 teaspoon vanilla extract 1 cup vanilla yogurt 1 tablespoon cocoa powder Instructions : 1-Preheat your oven to 180C. Line a muffin pan with muffin paper cups 2-In a medium bowl, add the flour and baking powder. Stir to combine. 3- In another bowl, add the eggs, sugar, oil, vanilla extract and vanilla yogurt. Whisk to combine. 4-Add the wet ingredients to the dry ingredients. Stir until just combined. Do not over mix. 5- Fill muffin cups two-thirds full and save some batter to make the circles on top. 6- In small bowl put half of the batter you saved. In another bowl put the other half and mix it with one tablespoon cocoa powder. 7-Put the two batters in piping bags. 8- Using the cocoa batter make a circle on the top of the muffin and fill the circle you made with the white batter. Repeat the process until all the muffins have several circles on top of them 9-Bake for 20-25 mins, until risen, firm to the touch and a skewer inserted in the middle comes out clean. 10-Let cool for few minutes before serving.
