Spanish Tortilla

Ingredients:
3 large potatoes
1 large onion
5 Eggs
2 cups vegetable oil for frying (you can use olive oil)
Salt,to taste
Garnish(optional):
Broccoli
Surimi
Instructions:
1-Peel the potatoes and cut them into mediud sized cubes.
2-Peel the onion and dice it.
3- In a nonstick pan heat up the oil on medium heat.
4- Once the oil is hot, add the potatoes and onion. Cover and let cook until the potatoes become soft.
5- Once done, set a sieve over a bowl and drain the potatoes from oil.
6-In a large bowl break the eggs and beat them with an egg beater.
7- Season the potatoes with salt and add them to the eggs.
8-Mix gently all the ingredients with a spoon or a spatula.
9- Heat the same pan on a medium high and pour in the potato and egg mixture, spreading it evenly.
10-Cook for 1 minute and then lower the heat to medium, cooking until the eggs are completely set at the edges.
11-Once the bottom of the tortilla is cooked put a plate that’s at least as wide as the skillet upside down over the pan and flip the tortilla on the plate.
12-Cook the other side of the tortilla on low heat for 3-4 minutes or until done.
13-Transfer the tortilla to a serving platter garnish it with the broccoli and surimi and serve it hot, warm or cold.
